Carlos is the founder of Allium Hospitality. In the summer of 2008, he came to Kelowna to work as an intern for his Culinary Arts Diploma. While at his internship he became amazed by the bountiful region that is the Okanagan. It’s this excitement that drove his appetite for farm-fresh produce within his kitchen and products. Slowly, he moved away from fine dining and towards the farm end of the ‘farm to table’ spectrum as growing food, guided by collaborative and sustainable principles, is the foundation of this enterprise. Now, in his second season on an organic farm, he has honed in on the notion that Allium is, first, a hospitality business with a passion to create a warm, inviting experience.
