Dimitri is the Sous Chef at The Lookout Restaurant at Gray Monk Winery. He received his Red Seal Certification at Okanagan College and has had the pleasure of working with many amazing chefs in the Okanagan Valley throughout his cooking career. A few notable places to mention are Mission Hill Winery, the Delta Grand Okanagan, Start Fresh Kitchen, Karat Chocolate & Pastry, and Waterfront Cafe & Catering. His cooking philosophy is to keep the food simple and delicious while showcasing local products.

Stephanie Long is currently the pastry Chef at Gray Monk Winery, as well as a substitute instructor for Culinary and Pastry Arts at Okanagan College.  She previously owned her own bakery and cafe in Kelowna called The Sawdust Bakery and has enjoyed living in the Okanagan for 20 years. Dimitri and Stephanie wanted to capture the summer in their beautiful cherry and frangipane pies.
