Originally from Port Macquarie, Australia, Nelson decided to make the permanent move to Canada in 2012 after spending a 3-month long vacation here. He started his career as Sous Chef at Waterfront wines, eventually moving on to chef and partner at Vice and Virtue Brewing. He regularly exercises a natural curiosity when it comes to cooking and a passion for touring local farms for inspiration. This inspiration can be seen in every dish he creates. You can currently find him as the Head Chef at The Canyon Bar & Grill at Gallagher’s Canyon Golf Course. Nelson’s is creating a delicate rosemary lamb pie.
